When the summer heat rises, the last thing you want to do it turn the oven on and cook! These refreshing bites are sure to satisfy in the heat of the summer. While this smaller portion is served as an appetizer, a few more ingredients, like salami, pickled vegetables and Italian bread can easily transform this bite into a light meal. Don't forget the wine!
This recipe is only limited by your imagination. Any flavor combination can work here. In this version, fresh peaches are paired with buffalo mozzarella balls and thinly sliced prosciutto de parma. A simple but classic trio.
The star of the show was a ripe summer tomato that was frozen and shaved over the top. The tomato "shaved ice" provides a crispy and refreshing surprise to the creamy mozzarella.
